How to Make This Easy Brookie Recipe

These homemade brookies come together in a few simple steps. First, you’ll prepare the fudgy brownie batter, then the chewy chocolate chip cookie dough before layering them together and baking to perfection.

Step 1: Prepare Your Baking Pan

Preheat your oven to 375°F. Line a 9×13-inch baking pan with parchment paper and lightly grease the sides for easy removal.

Step 2: Make the Brownie Batter

In a large mixing bowl, whisk together the melted butter and chocolate chips.

Whisk in the granulated sugar, brown sugar, vanilla, eggs, and egg yolks until smooth and glossy.

Add the melted butter, melted semi-sweet chocolate chips, and vegetable oil, mixing until fully combined.

Fold in the flour and cocoa powder until just combined. Be careful not to overmix the batter.

Step 3: Make the Chocolate Chip Cookie Dough

In a separate bowl, mix together the melted butter, dark brown sugar, and granulated sugar until fully combined.

Mix in the egg, egg yolk, and vanilla extract until smooth.

Add the flour, baking soda, and kosher salt, mixing until a soft dough forms. Fold in the chocolate chips and/or chocolate wafers.

Step 4: Assemble the Brookies

Spread the brownie batter evenly into the prepared baking pan.

Drop spoonfuls of the cookie dough over the brownie layer. Gently spread the dough slightly so it covers most of the top while still leaving some brownie visible.

Add extra chocolate chips on top if desired.

Step 5: Bake

Bake for 30–35 minutes, or until the cookie layer is golden brown and the center is just set.

A toothpick inserted into the center should come out with a few moist crumbs for perfectly fudgy brookies.

Step 6: Cool and Slice

Allow the brookies to cool completely in the pan before slicing into bars. Serve warm or at room temperature for the ultimate brownie-cookie dessert.

Expert Tips for the Best Easy Brookie

Want perfectly fudgy brownies and soft, chewy cookies in every bite? These simple tips will help your easy brookie recipe turn out bakery-quality every time.

  • Do not overbake
Brookies continue to set as they cool. Remove them from the oven when the center still looks slightly soft for the best fudgy texture.
  • Use room temperature eggs
Room temperature eggs blend more smoothly into the batter and cookie dough, creating a better overall texture.
  • Line your pan with parchment paper
This makes removing and slicing the brookies much easier and helps prevent sticking.
  • Use good-quality chocolate
Since chocolate is the star of this recipe, high-quality chocolate chips or chocolate wafers make a big difference in flavor.
  • Do not overmix the batter or dough
Overmixing can lead to dense or tough brookies instead of soft and chewy layers.
  • Let the brookies cool before slicing
Cooling allows the brownie layer to fully set and gives you cleaner slices.
  • Add extra chocolate on top
Sprinkling extra chocolate chips over the top before baking makes the brookies look extra bakery-style and adds even more chocolate flavor.

Recipe Variations

One of the best things about this easy brookie recipe is how customizable it is. Here are a few delicious ways to switch things up and make these brookies your own.

Add Chopped Walnuts or Pecans

For extra crunch and a classic brownie flavor combination, fold chopped walnuts or pecans into the brownie batter or cookie dough before baking.

Use Dark Chocolate Chips

Swap the semi-sweet chocolate chips for dark chocolate chips if you want a richer and more intense chocolate flavor.

Make Peanut Butter Brookies

Drop spoonfuls of peanut butter between the brownie and cookie layers for a delicious chocolate peanut butter combination.

Oreo Brookies

Crush Oreos into the cookie dough or layer whole Oreos between the brownie batter and cookie dough for an extra indulgent dessert.

Add Caramel

Drizzle caramel sauce between the layers or mix caramel bits into the cookie dough for gooey caramel brookies.

Sprinkle with Sea Salt

A light sprinkle of flaky sea salt on top balances the sweetness and enhances the chocolate flavor even more.

Storage Instructions

These brookies store beautifully, making them perfect for make-ahead desserts, parties, or late-night chocolate cravings.

Room Temperature

Store brookies in an airtight container at room temperature for up to 4 days. They’ll stay soft, chewy, and fudgy.

Refrigerator

For a firmer texture, store the brookies in the refrigerator for up to 1 week. Let them come to room temperature before serving for the best flavor and texture.

Freezing Instructions

Brookies freeze very well. Once completely cooled, place them in an airtight container or freezer-safe bag with parchment paper between layers to prevent sticking.

Freeze for up to 3 months.

To serve, thaw the brookies at room temperature or warm them in the microwave for a few seconds for that fresh-baked texture.
