This Lucky Charm Rice Krispie recipe is beyond easy to make and requires just a couple of ingredients. This is a perfect dessert to bring to family gatherings, birthday parties, or any gathering in general. These Lucky Charm Rice Krispie treats will be gone in no time (which is a good thing!).

Important Notes:
- Don’t burn your marshmallow mixture – it can be very easy to burn your marshmallows, and that is a major no-no! Overcooking your marshmallow mixture will result in a big headache for you because the mixture will be unworkable. Right when the marshmallows are completely melted, immediately pull from the heat to avoid burning your mixture.
- Before cooling in the freezer, the Lucky Charm Rice Krispie mixture will be hard to work with because of its incredible sticky nature. One thing that I would recommend doing is to spray your rubber spatula with cooking spray prior to mixing the lucky charms into your melted marshmallows. What this will do is prevent the marshmallows and lucky charms from sticking to your rubber spatula which will make the whole process easier and possibly less frustrating.
- Lastly, the whole process of making these Rice Krispies is quick and some parts happen fast (no need to worry, nothing crazy) so it is very important to be organized and ready. It’s important that you have everything pre-measured and organized so you are prepared to go! 🙂

Ingredients:
- 8 cups mini marshmallows (400g)
- 1/4 cup unsalted butter (57g)
- 5 cups Lucky Charms cereal (200g)
- Pinch of salt

Instructions:
- Melt butter in a large stockpot over low heat.
- Add marshmallows, constantly mixing with a rubber spatula until all marshmallows are melted.
- When all of the marshmallows are melted completely and the mixture is homogeneous, immediately take off heat.
- Add Lucky Charm Cereal to marshmallows.
- Mix until the cereal and marshmallows are completely combined.
- In a cake pan (either 8×8, 9×9, or 9×13 – only will affect thickness of finished product) use a stick of butter to coat the pan and sides evenly – OR line cake pan with Parchment Paper Sheets.
- Add Rice Krispie mixture to lined cake pan and use a rubber spatula to spread evenly, making sure to spread to the outside and corners.
- Put in the freezer for ~20 minutes to cool and harden.
- Cut into squares, serve, and enjoy!

Notes:
- No worries if you don’t have mini marshmallows. If you have larger marshmallows, just use a kitchen scale to measure out ~400g of your marshmallows of choice.
- Again, make sure not to burn your marshmallow mixture!
- If your Rice Krispie mixture is too sticky and hard to work with when using your spatula, spray your rubber spatula with cooking spray and you will be able to mix/spread much easier!
