Important Note:
- This recipe is a 1:1 ratio of water and granulated sugar which make the syrup quite thin. This is perfect for drink mix-ins, although it’s not the best idea for toppings for pancakes or ice cream. If you are looking to make a thicker strawberry simple syrup, I recommend doing a 2:1 ratio of 2 cups granulated sugar to 1 cup water. This will yield a thicker and more viscous syrup to use as a topping.
How to make strawberry simple syrup:
In a medium to large saucepan add 2 cups of water and heat over medium heat until a simmer

Once a simmer is achieved, add 2 cups of granulated sugar. Stir until the granulated sugar is dissolved

Add 2 pounds of fresh strawberries that have been destemmed and quartered to the saucepan

Maintain low to medium heat, simmering the strawberries in the sugar water for 15 minutes

Strain over a medium bowl and discard/compost the used strawberries

Ingredients:
- 2 cups water
- 2 cups granulated sugar
- 2 pounds fresh strawberries
Instructions:
- In a medium to large saucepan, add water over medium heat. Heat until a simmer occurs.
- Once a simmer is achieved, add granulated sugar. Stir until sugar is dissolved.
- Add strawberries, destemmed and quartered, to the sugar water.
- Simmer for 15 minutes, stirring as needed.
- Take off heat and strain over a large bowl.
- Transfer the syrup into an airtight container(s) and store in the refrigerator for two to three weeks from the date the syrup was made.
